Bisexual usually means attraction to more than one gender. Exact definitions vary by person. Some say two or more; some stress that gender still factors into how attraction feels.
A bi woman dating women is sapphic. So is a bi person who is single, or who dates across genders, as long as attraction to women is part of the picture and the word fits. Sapphic does not mean lesbian-only.
